<p><strong> Ingrediente:</strong></p>

<p>500-600 g carne de vitel, amestecata cu carne de porc mai grasa,<br />
100-150 g ceapa, 100 g unt, 30 ml untdelemn, o cutie de sardele, 50 ml<br />
vin, o lingurita rom, cite un virf de cutit condimente de pasteta, o<br />
lingurita cu virf sare.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Ceapa taiata marunt se caleste intr-o cratita, in untdelemn, 2 minute,<br />
apoi se pune carnea taiata in bucati mai mari care se amesteca ca sa se<br />
prajeasca la suprafata si se adauga sarea, condimentele, vinul si<br />
romul. Se lasa sa fiarba la foc mic, acoperita ca sa ramina carnea<br />
suculenta sause introduce cratita la cuptor, tot acoperita; din cind in<br />
cind se adauga cite 2-3 linguri de apa, ca sa nu se arda ceapa. Cind<br />
carnea s-a muiat, , furculita intra cu usurinta in ea. Dupa ce s-a<br />
racit, se trece de trei ori prin masina de tocat, impreuna cu sardelele<br />
sicu tot untdelemnul lor. Untul se freca pina cind se inmoaie, se<br />
amesteca cu tocatura sise sareaza dupa gust.<br />

<p>300 g sunca slaba, 3 oua, 100 g ciuperci, 150 g unt, 100 ml smintina<br />
groasa (se poate inlocui cu 50 g unt), 5-6 sardele, 80 g ceapa,<br />
condimente de pasteta.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Ceapa rasa fin se caleste, un minut, in 50 g unt si se adauga<br />
ciupercile bine spalate, taiate cit mai marunt, 1/2 lingurita cu sare<br />
si condimentele, lasindu-le sa fiarba, acoperite la foc mic, pina cind<br />
scade apa ce o lasa;daca este nevoie se adauga 1-2 linguri cu apa, pina<br />
cind se moaie bine.Cind sint gata, trebuie sa fie bine scazute.Ouale<br />
fierte tari se curata de coaja.Sunca se trece de 2 ori prin masina de<br />
tocat, impreuna cu ciupercile reci.La tocatura se adauga galbenusurile<br />
bine zdrobite cu furculita, albusul taiat mai mare, smintina si<br />
sardelele, amestecindu-le bine toate cu restul de unt (frecat pina ce<br />
se moaie);se adauga dupa guest, sare fina.Pasta se foloseste pentru<br />
sandvisuri sau se aranjeaza pe platou ca si pastetele.<br />

<p>Ceapa taiata marunt se caleste bine intr-o cratita, in tot untdelemnul,<br />
2 minute adaugind apoi carnea taiata in bucati mai mari (3-4 cm).Se<br />
amesteca pina cind se coaguleaza la suprafata (2-3 minute), apoi se<br />
adauga vinul, romul, condimentele si sarea, prajindu-le in continuare<br />
la foc mic, acoperite, pina ce se moaie bine, adaugind putina apa sau<br />
zeama in care a fost marinata carnea, avind grija, ca, la sfirsit,<br />
sosul sa fie scazut.Carnea rece se trece prin masina de tocat de 3 ori<br />
impreuna cu ficatul crud, franzela muiata in lapte sau apa si nestoarsa<br />
si cu slanina afumata.La tocatura se adauga smintina, untul topit dar<br />
rece, si galbenusurile, amestecindu-se bine.Albusurile batute spuma se<br />
amesteca cu compozitia numai prin rasturnare, apoi se desarta in forma;<br />
se coace si se serveste la fel.<br />

<p>Pestele curatat se asaza intreg intr-o tava smaltuita sau cratita,<br />
impreuna cu ciupercile bine spalate si taiate in felii mari in jurul<br />
lui, cu rosiile taiate in felii mai groase sau cu sucul de rosii,<br />
piperul, foaia de dafin, cimbrul,vinul si 3-4 felii de lamiie fara<br />
coaja alba (care amareste).Toate se presara cu o lingurita de sare si<br />
se pune untdelemnul.Tava se introduce in cuptor la foc submijlociu,<br />
unde se lasa cca o ora, ca pestele sa se friga incet; se stropesc cu<br />
sosul din cind in cind, atit pestele cit si ciupercile.Dupa ce s-a<br />
rumenit pe o parte, pestele se intoarce pe partea cealalta.Cind este<br />
gata, se serveste cald, cu ciupercile alaturi, ca garnitura, presarate<br />
cu marar sau patrunjel.<br />

2-3 pulpe de pui ,
50 gr.unt ,
1 paharel de lapte,
2linguri faina,
1 legatura de patrunjel verde,
1 varf de lingurita de sare,
1 morcov ,
1 ceapa si condimente daca vreti sa mai adaugati.

Se pun pulpele taiate pe din doua  la fiert impreuna cu patrunjeleul tocat marunt,ceapa si morcovul.
Cand sunt gata fierte, se pune in alta craticioara untul la incins si apoi se pune cu lingura incet faina
si amestecati bine (pt. a nu se face cocoloase)eu amestec cu un tel,iar cand se ingroasa stinge-ti cu
putin lapte pana se face ca o crema iar apoi pune-ti din zeama de la pulpe putin cate putin si amestecati
pana se omogenizeaza si se da intr-un clocot.
Pulpele le pute-ti cali putin in unt iar apoi sa le bagati in ciulama.

Se serveste fierbinte cu mamaliguta

Cantitati<br />
 4 piepturi de pui fierte si taiate bucati mici<br />
 1 cana cu alune taiate felii<br />
 3 cepe verzi taiate marunt<br />

 1/3 ceasca migdale taiate<br />
 1 lingura mac<br />
 1 cana orez<br />
 1 salata verde<br />
Se amesteca alunele, ceapa verde, puiul, susanul, migdalele si macul si se toarna peste ele un sos format din 4 linguri zahar, 4 linguri otet, 1 lingurita sare, ½ lingurita piper si ½ ceasca cu ulei, se amesteca. Se da la rece. Se serveste cu garnitura de salata verde.</p>

dupa gust, marar si patrunjel amestecindu-se de citeva ori ca sa-si<br />
insusasca mai bine aroma, apoi se iau la oparte si se acresc dupa gust<br />
cu zeama de lamiie. Se servesc calde sau reci ca fel intii sau asociate<br />
cu piure de cartofi.<br />

<p><strong> Mod de preparare: </strong></p>

tifon si presate putin cu palma, se trec usor prin untdelemn (pus pe o<br />
farfurie), asezindu-le apoi, direct pe gratarul incins (sau pe un gratar dublu,<br />
cu care se pot intoarce mai usor).Se prajesc pe fiecare parte 3-4 minute, pina<br />
cind se rumenesc putin.Se servesc imediat fierbinti cu bucatele de unt<br />
deasupra,stropite cu zeama de lamiie si presarate cu putina sare sau stropite cu<br />
mujdei de usturoi, care si sareaza.</p>
