<p>1/2 kg carne de pasare (piept, pulpe), 100 g ciuperci, 50 ml<br />
untdelemn,200 g unt, o cutie de sardele, 10 masline, 100 g sunca, 2-3<br />
castraveciori acri, un ou, o ceapa, o lingurita cu virf mustar, 100 ml<br />
vin, 2 linguri rom,sare, condimente de pasteta.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Ceapa taiata marunt se caleste intr-o cratita, in untdelemn, 2 minute,<br />
apoi, se adauga bucatile de carne, ciupercile, vinul, romul, sarea si<br />
condimentele.Se lasa sa se friga la foc mic, acoperite sau se introduce<br />
cratita in cuptor, acoperita ca sa ramina carnea moale si<br />
suculenta.Daca este nevoie, se pune putina apa, avind grija ca la<br />
sfirsit, sosul sa fie scazut.Cind furculita intra cu usurinta in carne,<br />
inseamna ca aceasta este gata.Dupa ce s-a racit si s-a scos de pe oase,<br />
carnea se trece de 3 ori prin masina de tocat, impreuna cu sardelele si<br />
cu untdelemnul lor.Untul se freaca pina ce devine moale, apoi se adauga<br />
tocatura, sunca, maslinele, castraveciorii acri, rasi prin razatoarea<br />
cu gauri mici si scursi de zeama si oul fiert tare &#8211; toate taiate in<br />
cuburi mici,Se amesteca bine si se adauga mustar si sare fina dupa<br />
gust.Pasteta se aranjeaza pe un platou, si apoi se tine in frigider ca<br />
sa se intareasca.Cu pasta neintarita sepot face sandvisuri;se poate<br />
folosi si ca umplutura pentru rulada.<br />

<p><strong> Ingrediente:</strong></p>
<p>ceapa (1), morcov (1), patrunjel (1), ulei (50 ml), vin negru (1 pahar),<br />
castraveciori murati (2-3), mustar (1 lingurita), otet (1 lingurita),<br />
piper, sare, dafin (1/4 frunza).</p>
<p><strong> Mod de preparare: </strong></p>
<p>Ceapa, morcovul si patrunjelul se curata, se spala si se rad pe razatoarea<br />
cu gauri mici. Se calesc apoi in ulei fierbinte, se stinge cu bulionul<br />
subtiat cu putina apa si se fierb impreuma cca 30 minute, dupa care se<br />
trec prin sita. Piperul obtinut se pune intr-o craticioara, la foc mic, se<br />
adauga vinul, mustarul, dafinul, castravetii curatati de coaja si taiati<br />
foarte marunt. Se potriveste de sare, piper si otet, se mai fierbe 10<br />
minute si se toarna peste preparatul indicat.</p>

<p><strong> Mod de preparare: </strong></p>

<p>Carnea se fierbe in circa 1 1/2 l apa clocotita ,ca sa se coaguleze<br />
repede la suprafata si sa ramina sucul in ea ,adaugindu-se imediat<br />
zarzavat de supa (morcov,telina, patrunjel,o ceapa alba) si o lingurita<br />
rasa de sare .In oala obisnuita sau in oala sub presiune ,zarzavatul<br />
fierbe impreuna cu carnea.Cind carnea este fiarta ,se strecoara supa<br />
necesara .Intr-o cratita ,faina se infierbinta cu untul topit sau cu<br />
untdelemnul la foc mic (nu direct pe flacara ) numai un minut (fara sa<br />
se rumeneasca ),stingindu-se apoi cu supa fierbinte ,adaugata de 2 ori<br />
si amestecind de fiecare data pina cind se desfac toate cocoloasele<br />
formate.Se pot inlocui circa 100 ml supa cu lapte ,ca sosul sa fie mai<br />
alb .Pentru gust mai bun se adauga 1/2 lingurita cu Vegeta care si<br />
sareaza.Sosul trebuie sa aiba consistenta unei smintini (care curge)<br />
,la nevoie se dilueaza cu lapte sau supa si, dupa ce a fiert citeva<br />
clocote ,cratita se ia de pe foc.Daca nu s-a pus lapte ,se amesteca<br />
imediat cu smintina frecata cu o lingura de apa rece ,potrivindu-se<br />
gustul cu sare.Carnea taiata in bucati (daca este de pasare) sau in<br />
felii se adauga in sos.Ciulamaua fierbinte se presara cu patrunjel si<br />
se serveste cu mamaliguta calda.Ciulamaua din carne de vitel<br />
,miel,iepure domestic tinar se pregateste la fel,insa cind este luata<br />
de pe foc,se acreste dupa gust cu zeama sau sare de lamiie si pentru<br />
aroma i se adauga tarhon.Se serveste cu garnitura de orez,piure de<br />
carytofi,sau cu galuste pentru papricas.<br />

<p>Se prepara un piure de spanac mai gros, se aseaza intr-un vas rezistent<br />
la foc, uns cu grasime si tapetat cu pesmet. Se sparg ouale, peste oua<br />
se presara cascaval ras sau telemea rasa. Odata cu cascavalul sau cu<br />
brinza telemea, se pun si citeva bucatele de unt. Vasul se baga la<br />
cuptor, unde se tine 10 min, ca sa se coaguleze ouale. Se servesc<br />
fierbinti.<br />

<p>Curatati de intestine si branhii,insa nu si de solzi, se spala pestii,<br />
lasandu-i intregi. Se sterg bine la suprefeta cu un servet de hirtie.<br />
Intr-o tava de tabla nesmaltuita (mai veche), se pune un strat de sare<br />
cu grosimea de 2-3 mm si se asaza pe plita foarte fierbinte. Se lasa sa<br />
se infierbinte, intorcand-o cu o lingura de lemn. Cand sarea este<br />
foarte firerbinte, se asaza pestii pe ea, unul langa altul, lasindu-i<br />
fara sa se intoarca pana cand se rumenesc; apoi se pot intoarce pe<br />
partea cealalta. Daca sarea nu este foarte fierbinte sau pestii sunt<br />
inca uzi, acestia nu se coaguleaza imediat la suprafata si vor absorbi<br />
prea multa sare. Cind sunt prajiti, pestii se pun pe o planseta, li se<br />
indeparteaza solzii cu un cutit ascutit si, fara sa se mai spele, se<br />
asaza intr-un platou, turnandu-se peste ei apa fierbinte cat sa-i<br />
cuprinda; apa se va sara suficient de la sarea ramasa pe ei. In<br />
saramura se adauga 2-3 bucatele de ardei iute (sau dupa gust). Ardeiul<br />
iute se poate inlocui cu cativa catei de usturoi taiati in felii, sau<br />
cu o ramura de cimbru. Se serveste ca fel intii. Saramura se poate<br />
pregati la fel si din pesti mari, prajiti la gratar sau la protap. Apa<br />
care se toarna peste ei, se sareaza dupa gust si se aromeaza cum s-a<br />
aratat la inceput. Se serveste la fel, ca fel intii.<br />

<p><strong> Ingrediente:</strong></p>
<p>100 g unt, 100 g untura, 100 g zahar, 2 galbenusuri sau un ou intreg, 150 ml<br />
lapte sau smintina, 30 g drojdie, 500 g faina, 1/2 lingurita sare, vanilie,<br />
coaja rasa de lamiie.</p>
<p><strong> Mod de preparare: </strong></p>
<p>Intr-un castron, se freaca drojdia cu zaharul, pina cind se lichefiaza, apoi se<br />
adauga untul si untura sau margarina moale, galbenusurile sau oul intreg,<br />
laptele sau smintina ,sarea, coaja de lamiie sau vanilia si, la urma, faina.Se<br />
amesteca mai intii cu lingura si, apoi, se framinta cu mina 5-6 minute; aluatul<br />
va fi mai virtos.Se lasa sa creasca la cald 15 minute, apoi se pune pe o foaie<br />
de naylon, presarata cu faina si se intinde in foaie dreptunghiulara de 3-4 mm<br />
grosime.Foaia se taie in fisii pe lungime cu latimea de 6-7 cm, iar acestea se<br />
taie pe diagonala, in triunghiuri.Pe cite o latura a fiecarui trunghi se pune<br />
1/2 lingurita cu marmelada mai virtoasa. Triunghiurile se ruleaza in forma de<br />
cornuri si, pe masura ce sint gata, se asaza in tavacca 15 minute, apoi se ung<br />
cu pensula muiata in albus batut putin cu furculita.Se coc 30 minute la foc<br />
mijlociu (putin rumenite), apoi se trec prin zahar pudra cu vanilie.</p>

<p><strong> Mod de preparare:</strong></p>
<p>Spalati si curatati ciupercile, le tocati piciorusele si le amestecati cu piperul, sarea si 2 legaturi de verdeata. Puneti aceasta tocatura in palaria ciupercilor, adaugati putin ulei si le puneti pe gratar. Dupa ce s-au fript bine le scoateti pe o farfurie si le lasati sa se raceasca 5 min.</p>

<p>100 g brinza de vaci, 100 g cascaval ras, 100 g telemea rasa, 2 oua<br />
mari, 50 g faina, marar.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Brinzeturile se amesteca bine cu dosul furculitei ca sa se omogenizeze,<br />
adaugind ouale intrgi, faina si mararul taiat marunt.Compozitia trebuie<br />
sa fie mai consistenta.Se ia din compozitie cite o ligura cu virf, se<br />
ruleaza pe masa sau pe o foaie de nailon presarata cu faina, formind un<br />
sul de 2 cm.Acestea se modeleaza in forma de bila si se dau prin<br />
faina.Se pregatesc toate si se asaza la masa.Se toarna 1/2 l untdelemn<br />
intr-o cratita de 1 l si se lasa sa se infierbinte.In untdelemn se pune<br />
o bucatica de aluat, cit un bob de porumb si, cind acesta se ridica la<br />
suprafata si se rumeneste, inseamna ca se pot pune gogosile.Se asaza<br />
unele linga altele, neinghesuite deoarece cresc la copt.Se intorc (cu o<br />
andrea subtire), ca sa se rumeneasca frumos de jur imprejur, apoi se<br />
scot cu spumiera, sau pe o furculita.Se servesc fierbinti ca<br />
aperitiv.Nu se sfarima la fiert si sint foarte fragede.Se pot reincalzi<br />
pe apa clocotita, sau in cuptor acoperite, timp de 10 minute.<br />
