<p>4 oua, 1/2 kg cartofi, 30 g unt sau untdelemn, 2 linguri lapte, 50 g<br />
cascaval ras sau brinza telemea rasa.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Se prepara un piure de cartofi si se aseaza intr-un vas de cca 2 l,<br />
rezistent la foc, uns cu grasime si tapetatcu faina sau pesmet. Se<br />
imparte piureul in 4 sferturi. Din fiecare sfert se modeleaza cite un<br />
cuib cu dosul unei linguri (cuibul trebuie sa fie atit de mare incit sa<br />
incapa in el un ou crud ). Se sparge cite un ou in fiecare cuib. Se<br />
presara cu parmezan ras sau cu telemea rasa si cu citeva bucatele de<br />
unt. Se dau la cuptor cu 10-15 min inainte de servire.<br />

rasa de sare si cu 2 linguri de otet, care au proprietatea de a coagula<br />
mai repede albusul. Se sparge fiecare ou, pe rind, intr-o ceasca,<br />
pentru a evita riscul ca vreunul sa fie alterat. Cu ceasca se da drumul<br />
mai usor oului sa alunece chiar la suprafata apei. Cu fiecare ou se<br />
procedeaza la fel. Se fierbe fiecare numai 1-2 minute, pina cind se<br />
coaguleaza albusul, galbenusul raminind moale. Daca se tin mai mult in<br />
apa clocotita, se intareste prea mult albusul. Se pot fierbe pe rind,<br />
unul sau cite doua, in vas mai mic. Se scot cu spumiera, scurse bine de<br />
apa. Se asaza pe o farfurie calda, iar deasupra lor se pun bucatele de<br />
unt si patrunjel taiat marunt. Se servesc imediat fierbinti.<br />

dafin si o lingurita de Delikat. Dupa ce s-a calit tot amestecul, se<br />
adauga apa(cca o cana)si se fierbe, aprox. 7 min., apoi se toarna sosul<br />
peste spaghetti.</p>

<p>â¢4 vinete, 4 ardei, 4 cepe, 4 rosii decojite, o jumatate de ceasca de<br />
ulei, sare, 2 foi de dafin, piper boabe.<br />
â¢Se coc vinetele si ardeii, se curata de coaja si se lasa la scurs.<br />
Cepele se curata, se spala, se taie marunt si se pun la calit in ulei<br />
fierbinte. Se micsoreaza focul cand ceapa devine sticloasa si se adauga<br />
rosiile decojite, taiate felii subtiri. Se fierb impreuna la foc mic 30<br />
de minute, dupa care se adauga ardeii si vinetele taiate fasii sau<br />
tocate marunt cu cutitul de vinete. Peste amestec se adauga sare,<br />
piper, foile de dafin, apoi se scade (de preferat in cuptor). Se<br />
serveste bine scazuta, calda, dar mai ales rece.</p>

brinza telemea, se pun si citeva bucatele de unt. Vasul se baga la<br />
cuptor, unde se tine 10 min, ca sa se coaguleze ouale. Se servesc<br />
fierbinti.<br />

<p>1/4 kg carne, 50 g franzela, 50 g ceapa, 3-4 catei de usturoi, un ou,<br />
piper, patrunjel sau marar, untdelemn, sare fina.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Carnea se trece de 2 ori prin masina de tocat, impreuna cu franzela<br />
muiata, o clipa, in apa rece si bine stoarsa si cu ceapa taiata marunt<br />
si calita, un minut, cu 2 linguri de untdelemn. La tocatura se adauga<br />
oul crud, un virf de cutit cu piper, 1/2 lingurita de sare fina,<br />
usturoiul taiat marunt si patrunjelul sau mararul taiat marunt; se<br />
amesteca bine. Pe o foaie de nailon se pun 1-2 linguri de faina sau<br />
pesmet, se ia cite o lingurita cu virf din compozitie, se trece prin<br />
faina sau pesmet si se formeaza chiftele rotunde si turtite. Se<br />
infierbinta tigaia fara grasime 3-4 minute, la foc mijlociu, se pune<br />
apoi untdelemn 1/2 cm. si imediat se asaza chiftelele unele linga<br />
altele, cite incap, neinghesuite; se rumenesc circa 10 minute pe o<br />
parte, apoi se intorc pe partea cealalta. Cind sint gata se scot si se<br />
inlocuiesc cu altele, pe masura ce se prajesc. Prajirea trebuie sa<br />
dureze circa 10 minute pe fiecare parte. Se pastreaza calde, pe un vas<br />
cu apa fierbinte, acoperite. Se servesc calde cu orice garnitura de<br />
legume, cu salata de cartofi cu ceapa , cu fasole batuta, varza calita,<br />
mincaruri de legume, piure de spanac sau de urzici, cu sos de macris,<br />
iar reci cu ardei, rosii, ridichi.<br />

<p>3-4 oua, o ceapa mica, 100-150 g creier (de porc sau de vitel ), 50 g<br />
unt sau untdelemn, patrunjel, sare, piper.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Intr-o tigaie incalzita 3-4 min,la foc mic, se pune tot untul sau<br />
untdelemnul, imediat se adauga ceapa taiata marunt sau rasa fin, se<br />
caleste 1/2 min, apoi se aseaza creierul taiat in felii de 2 cm<br />
grosime. Se lasa sa se infierbinte, fara sa se amestece, pina cind se<br />
incheaga, cca 5 min, apoi feliile se intorc pe partea cealalta si se<br />
lasa 5 min. In acest timp, se pregatesc ouale ca pentru jumari simple;<br />
se adauga un virf de cutit cu piper, un virf de lingurita cu sare si<br />
patrunjelul taiat marunt si se desarta peste creier. Compozitia se lasa<br />
sa se inchege si sa se rumeneasca putin la baza. Bucatile de creier se<br />
intorc ca sa se rumeneasca si pe cealalta parte, sau se amesteca cu<br />
jumarile.<br />
