<p><strong> Ingrediente:</strong></p>
<p>ulei (100 ml), faina (2 linguri), pasta de rosii (150 g), supa (500-600<br />
ml), mustar (2 linguri), cimbru (1 crenguta), busuioc (1 crenguta mica),<br />
sare, piper, zahar (2 linguri).</p>
<p><strong> Mod de preparare: </strong></p>
<p>Se pune faina in uleiul incins, amestecind repede cu o lingura de lemn;<br />
dupa 2-3 minute se stringe cu o ceasca de supa, se adauga pasta de rosii,<br />
mustarul, zaharul ars separat intr-o tigaita si stins cu supa, cimbrul si<br />
busuiocul; se sareaza si se pipereaza. Se fierbe sosul pina scade la<br />
consistenta dorita, apoi se intrebuinteaza la fripturile de pasare<br />
lacuite, sau ca sos picant la fripturile de pasare.</p>

<p><strong> Ingrediente:</strong></p>
<p>andive (700g), piept de pasare fiert (350g), maioneza, smintina (3<br />
linguri), zeama de lamiie (1/2 lamaie).</p>
<p><strong> Mod de preparare: </strong></p>
<p>Se aleg andive tinere (andivele tinere nu au frunze verzi care sunt<br />
amare), se taie putin din cotor, se curata, se spala rapid sub un jet de<br />
apa, se scurg de apa, apoi se desfac frunzele, care se lasa intregi sau se<br />
rup in doua, se pun intr-o salatiera sau intr-un castron, se amesteca cu<br />
pieptul de pasare taiat in lung si cat mai subtire; cu maioneza (preparata<br />
din: 1 ou, 150ml ulei, sare, zeama de lamaie) si cu smantana; se sareaza,<br />
se pipereaza si se acreste dupa gust.</p>

<p>Visinele se pun, cu o zi inainte pe un servet de hirtie ca sa se usuce.<br />
Biscuitii sau prajiturile uscate se trec prin masina de nuca. Nucile se<br />
prajesc, dinainte, in cuptor, apoi se trec prin masina de nuci.<br />
Biscuitii, nucile, marmelada, romul, zaharul, cacaua neaparat cernuta<br />
si zaharul vanilat se pun intr-un castron, amestecind bine. Se ia din<br />
compozitie, cu lingurita cite o bucata de marimea a doua visine,<br />
aplatizind-o pe palma; se asaza o visina pe ea, apoi compozitia se<br />
aduna in jurul visinei si se modeleaza intre palme in forma de bila.<br />
Bilele se asaza una linga alta pe o tava si se lasa sa se usuce. A doua<br />
zi, se glaseaza cu serbet sau cu glazura de ciocolata.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Prin aceasta metoda se conserva frecvent in mica gospodarie:morcovii,<br />
patrunjelul, telina, mai ales cind nu se dispune de spatii de<br />
depozitare.Zarzavatul se spala bine de pamint cu spalatorul din<br />
plastic, se curata si, apoi, fara sa se mai spele, se taie in felii de<br />
1/2 cm sau mai groase, sau se lasa intregi (radacinile subtiri).Intregi<br />
sau felii, se suprapun in 2-3 rinduri cu spatii intre ele (ca gratarul<br />
), intr-o tava captusita cu hirtie de ziar. Tava se introduce in<br />
cuptorul bine incins, unde se lasa 10 minute (cu usa cuptorului<br />
inchisa), ca sa se distruga microorganismele (bacterii, mucegaiuri).<br />
Dupa aceea, focul se stinge si tava se lasa la cuptor ca zarzavaturile<br />
sa se usuce in continuare, la orice sursa de caldura (pe calorifer, pe<br />
soba de teracota si la soare, cind sint conditii). Daca, intre timp,<br />
apare o substanta lipicioasa pe zarzavat, inseamna ca acolo a inceput<br />
sa fermenteze; deci, tava se va introduce din nou in cuptor, la foc<br />
tare 10-15 minute si, apoi, se lasa in continuare, la foc mic sau cu<br />
usa cuptorului deschisa, schimbind pozitia bucatilor de zarzavat; cele<br />
alterate se arunca.Dupa ce s-au uscat foarte bine, se pun in saculet<br />
din tifon, atirnat de un cui, intr-un loc uscat.Inainte de<br />
intrebuintare, zarzavatul se spala bine cu apa calduta de zaharul care<br />
s-a caramelizat pe suprafata lui; altfel, supa de carne se va inchide<br />
mult la culoare.Zarzavatul proaspat (morcovul) se poate combina cu cel<br />
uscat (patrunjel, telina) sau conservat cu sare.<br />

<p><strong> Ingrediente:</strong></p>
<p> 4 ouã, 1/2 kg cartofi, 30 g unt sau untdelemn, 2 linguri lapte, 50<br />
g caºcaval ras sau brînzã telemea rasã.</p>
<p><strong> Mod de preparare: </strong></p>
<p> Se preparã un piure de cartofi ºi se aºeazã într-un vas de<br />
circa 2 l, rezistent la foc, uns cu grãsime ºi tapetat cu fãinã sau pesmet. Se<br />
împarte piureul în 4 sferturi. Din fiecare sfert, se modeleazã cîte un cuib cu<br />
dosul unei linguri (cuibul trebuie sã fie atît de mare încît sã încapã în el un<br />
ou crud). Se sparge cîte un ou în fiecare cuib. Se presarã cu parmezan ras sau<br />
cu telemea rasã ºi cu cîteva bucãþele de unt. Se dau la cuptor cu 10-15 min<br />
înainte de servire.</p>
