<p>Visinele se pun, cu o zi inainte pe un servet de hirtie ca sa se usuce.<br />
Biscuitii sau prajiturile uscate se trec prin masina de nuca. Nucile se<br />
prajesc, dinainte, in cuptor, apoi se trec prin masina de nuci.<br />
Biscuitii, nucile, marmelada, romul, zaharul, cacaua neaparat cernuta<br />
si zaharul vanilat se pun intr-un castron, amestecind bine. Se ia din<br />
compozitie, cu lingurita cite o bucata de marimea a doua visine,<br />
aplatizind-o pe palma; se asaza o visina pe ea, apoi compozitia se<br />
aduna in jurul visinei si se modeleaza intre palme in forma de bila.<br />
Bilele se asaza una linga alta pe o tava si se lasa sa se usuce. A doua<br />
zi, se glaseaza cu serbet sau cu glazura de ciocolata.<br />

<p>150 g creier de porc sau vitel, 50 g parmezan sau brinza telemea, 50 g<br />
ceapa, un ou, 25 g faina, 50 g franzela, o lingurita rasa de sare, un<br />
virf de cutit sau de lingurita de piper si ienibahar sau nucsoara,<br />
marar sau patrunjel, pesmet.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Ceapa, rasa fin sau taiata foarte marunt, se caleste, un minut, cu o<br />
lingura de untdelemn.Creierul se zdrobeste bine cu furculita, se adauga<br />
ceapa calita, oul intreg, piperul, ienibaharul, faina, franzela muiata,<br />
o clipa, in apa rece si bine stoarsa, sarea marar sau patrunjel taiat<br />
marunt, brinza rasa si se amesteca bine.Compozitia va fi moale.Pe o<br />
foaie de naylon se pun 2 linguri cu faina sau pesmet si i se da forma<br />
de chiftea.Se pregatesc la inceput 10-12 bucati, pentru o tigaie, apoi<br />
se continua la fel, pina cind se termina compozitia.Tigaia, fara<br />
grasime, se infierbinta, 3-4 minute, la foc mijlociu, se toarna<br />
untdelemn intr-un strat de 1/2 cm si, imediat, se asaza chiftelele,<br />
unele linga altele, neinghesuite.Se rumenesc, circa 5-6 minute, pe<br />
fiecare parte, la foc mijlociu (dar nu direct pe flacara).Pe masura ce<br />
unele sint prajite, se inlocuiesc cu altele, ca sa nu se arda grasimea.<br />

<p>Ceapa rasa prin razatoarea cu gauri mici, se caleste in tot<br />
untdelemnul, un minut. Se stinge cu sucul de rosii, frecat cu faina si<br />
cu supa rece si se adauga toate celelalte ingrediente, inclusiv limba.<br />
Cratita se introduce in cuptor, unde se lasa 30 minute, ca sa fiarba<br />
maslinele si sa se ridice untdelemnul. Sosul nu trebuie sa fie prea<br />
gros, deoarece cind se raceste se mai ingroasa; daca este nevoie se mai<br />
dilueaza cu putina supa sau suc de rosii. Sare se pune numai cind se<br />
raceste,daca mai este necesar (au fost si maslinele sarate). Se<br />
serveste rece ca fel intii.<br />
