<p><strong> Ingrediente:</strong></p>
<p>2 oua, 100 g faina, 20 g cacao, 100 g zahar, 15 ml rom, 40 g unt, 100 g frisca,</p>
<p><strong> Mod de preparare: </strong></p>
<p>Albusurile se bat spuma, se adauga zaharul tos si romul si se bat in continuare<br />
pina se intaresc din nou , apoi se pun galbenisurile, untul topit si frisca. Se<br />
bat de 4-5 ori apoi se pune toata faina, impreuna cu cacaua. Se coc in tava unsa<br />
bine cu margarina si tapetata cu faina cca 7-8 min.</p>

<p>1/4 Kg de mere, 50 ml smintina, 20 g faina, 25 g unt, o linguirta<br />
zahar, zeama de lamiie, patrunjel, telina.<br />

<p><strong> Mod de preparare: </strong></p>
<p>__________________________________________________________________</p>
<p>Merele, curatate de coaja, rase prin razatoarea cu gauri mari sau<br />
taiate in felii de 1 cm grosime se fierb 10 minute intr-o cratita cu<br />
1/4 l apa sau supa de oase sau de zarzavat. Se pun un virf de lingurita<br />
cu sare sau 1/2 lingurita vegeta si o frunza telina. Cind merele sint<br />
fierte, se adauga faina amestecata cu smintina si 2 linguri cu apa<br />
rece, lasindu-se sa fiarba 2-3 clocote. Daca este prea gros, se<br />
dilueaza pina cind devine ca o smintina subtire. Dupa ce cratita se ia<br />
de pe foc, se adauga untul proaspat si patrunjel taiat marunt. Cine<br />
doreste mai acru, adauga citeva picaturi de lamiie si o linguirta cu<br />
zahar care-I va da gust placut. Se serveste cu rasol de pasare, vaca,<br />
vitel, cu limba fiarta, ficat prajit natur, snitele, friptura<br />
inabusita, toate asociate cu piure de cartofi.<br />

<p>Varza rosie, curatata de frunzele vestede si controlata sa nu aiba<br />
nisip pe frunze, se taie in jumatate si, apoi, in felii subtiri ca<br />
fideaua, se presara cu o lingurita rasa de sare, se amesteca bine si se<br />
asaza in salatiera. Se stropeste cu untdelemn, zeama de lamiie sau otet<br />
si se lasa sa se moaie, ca sa fie mai gustoasa. Varza rosie are<br />
frunzele mai rigide, nu lasa apa, de aceea nu este nevoie sa fie<br />
stoarsa.<br />

<p>1 kg spanac, o lingurita ceapa rasa, 50 g faina, 100 g franzela, 100 g<br />
slanina afumata, 250 ml smintina, 150 ml suc de rosii, un virf de cutit<br />
piper, 150 g brinza telemea, 4 oua mari sau 5 oua mijlocii.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Dupa ce s-a spalat, spanacul se fierbe, 5 minute si, apoi, se lasa in<br />
strecuratoare pina se raceste.Slanina, taiata cit mai marunt, se<br />
caleste la foc mic, pina cind capata culoare aurie, apoi se ia de pe<br />
foc, se pun usturoiul taiat marunt si ceapa rasa (se poate si fara) si<br />
imediat se adauga spanacul scurs.Franzela se inmoaie cu sucul de rosii<br />
pina cind il absoarbe in intregime.Spanacul rece impreuna cu franzela<br />
nestoarsa se trec prin masina de tocat.La tocatura se adauga smintina,<br />
faina, galbenusurile, brinza rasa, nedesarata, piperul si o lingurita<br />
cu virf de marar taiat marunt, amestecindu-se bine; apoi, se adauga<br />
albusurile batute spuma, amestecind cu telul, prin rasturnare, de 8-9<br />
ori si se desarta in forma de cca 2l dinainte tapetata.Se introduce in<br />
cuptorul bine incins dinainte, unde se lasa 30-40 minute, pina cind<br />
budinca se rumeneste frumos.Nu se deschide cuptorul 20 minute.Cind se<br />
scoate din cuptor, se trece cu cutitul pe margine, ca budinca sa se<br />
desprinda, daca s-a lipit, apoi se pune farfuria de servit deasupra ei<br />
si se rastoarna.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Franzela, taiata in felii, se inmoaia in lapte pina cind il absoarbe in<br />
intregime. Ceapa taiata marunt se caleste, un minut, in tot untul sau<br />
untdelemnul. Carnea se trece prin masina de tocat, impreuna cu franzela<br />
nestoarsa si ceapa calita. La tocatura se adauga smintina, faina,<br />
galbenusurile, piperul sau putin cimbru farimitat, o lingurita cu sare,<br />
mararul sau patrunjelul si se amesteca bine. Albusurile batute spuma se<br />
amesteca cu aceasta compozitie, cu telul, prin rasturnare, apoi se<br />
desarta intr-o cratita de 2 1/2 l, bine unsa cu margarina solida si<br />
tapetata cu pesmet. Se coace la foc tare, in tava cu apa fierbinte,<br />
introdusa din timp la cuptor. Dupa 30 minute, se poate acoperi, daca se<br />
rumeneste prea mult si focul se reduce la mijlociu; se coace circa 60<br />
minute. Se serveste, fierbinte, cu sos de rosii sau macris, cu piure de<br />
spanac sau urzici, cu salata de cartofi sau cu alte legume, ca fel doi.<br />
Se poate servi si rece, taiata in felii, cu legume crude sau muraturi.<br />

<p><strong> Ingrediente:</strong></p>

<p>50 g unt sau untdelemn, 30 g faina, 2 galbenusuri, 100 ml smintina, 200<br />
ml vin alb sec, 1 2 l supa in care a fiert pestele.<br />

<p><strong> Mod de preparare: </strong></p>

<p>Faina si untul sau untdelemnul se infierbinta intr-o cratita, un minut,<br />
la foc mic, se sting cu supa fierbinte,adaugata in 2-3 rinduri,<br />
amestecind bine pina se desfac cocoloasele si la urma se toarna vinul.<br />
Se lasa sa fiarba 2-3 clocote ca sa se lege, apoi cratita se ia de pe<br />
foc. Galbenusurile se freaca cu smintina si facultativ se pune o<br />
lingurita cu mustar; totul se amesteca cu sosul fierbinte. Pentru aroma<br />
se adauga marar, patrunjel, tarhon dupa gust.<br />
